Healthy Lunch Box

Menu for Week of Nov 14

What an exciting weekend!  I can’t believe how much we did over the Veteran’s Day long weekend.  First, let me once again thank all of the veterans who stand up for us and our country.  You are a special group and we owe you a heartfelt thanks for what you do and what you are prepared to do if needed to protect us.

We started the weekend off with a day of mountain biking at our favorite state park for this exciting sport.  We are all getting better and better and we are able to tackle increasingly tougher courses.  It is so exciting to challenge yourself to make it through a trail without wiping out and in a faster time than the previous attempt.  Of course I wipe out regularly and I have the scratches and bruises to prove it!

On Saturday my extended family got together for a very early Thanksgiving dinner.  So many family members will either be traveling or working on the actual Thanksgiving day that we thought we should do it early so we could be thankful for and with each other for all of life’s many blessings.  A big thank you to my fantastic cousin for hosting the event!

Sunday found us feverishly completing school projects and science fair projects and then having a nice afternoon with the in-laws.  Now it is Sunday night and I am looking forward to posting my weekly menu and then sitting down to catch up on a special crochet project that I am making for my sister.

I hope that you found time to enjoy life in your own special way this weekend.
